FEMA Trailers Arrive for Texas Wildfire Victims

The first temporary housing units arrived this week in Bastrop County, courtesy of the Federal Emergency Management Agency
FEMA spokesman Ray Perez said Wednesday that the trailers will be available for up to 18 months
More than 1,500 homes were destroyed during wildfires that began Labor Day weekend in the Bastrop area, about 30 miles east of Austin
Eligible residents need to apply to be considered for FEMA housing assistance Two- and three-bedroom trailers are available

The Different Curing Methods Of Green Olives

Harvesting this fruit alone possess a number of challenges due to its sensitivity to timing; if it is harvested too early or too late, growers dont get the optimum quality possible. Harvesting this fruit is not the only step it goes through before it can be eaten, it has to go through a fermentation process called curing. Freshly picked green olives have a bitter taste that makes it almost impossible to eat. They are first fermented or cured before they turn into the delicious and refined appetizers that we are familiar with.
There are many ways to cure green olives but the original method is called dry curing. This is achieved by mixing 9 parts olives and 1 part sea salt in a container and left to ferment for 4 to 6 weeks. This procedure eliminates the olives natural bitter taste and replaces it with the salty taste we are accustomed to. Since salt has the tendency to dehydrate things it comes in contact with, this method gives the olive a wrinkled appearance.
